Method
 

  1. In a mixing bowl, whisk together the raw heavy cream, egg yolks, raw honey, vanilla extract (if using), and a pinch of sea salt until smooth and well combined.
  2. Pour the mixture into a freezer-safe container.
  3. Place in the freezer for 30 minutes. After 30 minutes, stir the mixture to prevent ice crystals from forming.
  4. Repeat stirring every 30 minutes for a total of 1.5 hours.
  5. Once the mixture reaches a soft-serve texture, serve immediately or freeze longer for a firmer scoopable consistency.
