  • 1 cup cooked shredded chicken optional but traditional
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme optional

Method
 

  1. Prepare the Dough:
  2. In a large mixing bowl, whisk flour, baking powder, and salt. Cut in butter until crumbly. Gradually stir in milk until soft dough forms.
  3. Roll and Cut Dumplings:
  4. On a floured surface, roll out dough to about 1/4-inch thick. Cut into 1-inch strips or squares.
  5. Simmer the Broth:
  6. In a large pot, heat olive oil or butter. Add broth, bring to a gentle boil, then reduce heat to simmer. Stir in shredded chicken and seasonings.
  7. Cook the Dumplings:
  8. Drop dumpling strips into simmering broth. Cook uncovered for 10 minutes, then cover and cook for another 10 minutes, until dumplings are puffed and cooked through.
  9. Let Rest:
  10. Remove from heat and allow to rest for 5–10 minutes before serving. Garnish with fresh herbs if desired.
